Ingredients for Banana Halwa:
2 ripe bananas (mashed)
1 cup semolina
1 cup sugar (to taste)
1/2 cup ghee
1 liter of milk
1/4 teaspoon cardamom powder
1 tablespoon raisins
1 tablespoon almonds, finely chopped
1 tablespoon cashews, finely chopped
1 teaspoon saffron threads
Method:
First, peel the bananas and place them in a bowl. Mash them thoroughly with a fork or your hands, ensuring no pits remain. Remember, the bananas should be fully ripe; this enhances the flavor and sweetness of the halwa.
Heat ghee in a heavy-bottomed pan. Add semolina and begin to fry over medium heat. Stir constantly to prevent burning. When the semolina turns light golden and begins to smell fragrant, remove it from the pan and place it on a separate plate.
Add some more ghee to the same pan and add the mashed bananas. Fry the bananas over medium heat for about 4-5 minutes, until they turn light brown and begin to smell fragrant. Now add the roasted semolina and mix well.
Slowly add the milk to this mixture, stirring constantly to prevent any lumps. Add the sugar and cardamom powder and mix well. If using saffron, soak it in a tablespoon of milk, mash it slightly, and add it to the halwa.
Let the halwa cook over medium heat for about 8-10 minutes, until it thickens and the semolina is completely cooked. Stir constantly to prevent it from sticking to the bottom.
When the halwa starts leaving the bottom of the pan and the ghee begins to separate, it is ready. Add the raisins and some dried fruits and mix.
