250 grams of paneer (cottage cheese)
300 grams of finely chopped onions
Tomato puree
Refined oil as required
Salt to taste
Half a teaspoon of turmeric
Garam masala powder
Red chili powder
5 small uncooked flour rotis
Ginger-garlic paste
Cumin seeds
Coriander leaves
Recipe
- Begin by grating the paneer. In a pan, heat refined oil and add cumin seeds. Once the seeds start to crackle, incorporate the grated paneer and salt, frying until golden.
- Next, stir in turmeric and garam masala powder to taste. Allow it to cook on low heat for about 5 minutes before removing it from the stove.
- Prepare small rotis from the flour, place the paneer mixture inside, roll them up, and deep-fry in hot oil until crispy.
- For the gravy, heat refined oil in a separate pan. Add bay leaves, cumin seeds, and garlic paste, frying until aromatic.
- Once the garlic is well-fried, add the chopped onions and sauté until they turn golden. Then, mix in the tomato puree.
- Afterward, add yogurt and let it simmer on low heat for 5 minutes. Season with salt, garam masala, and red chili powder, adding a splash of milk while stirring.
- When the mixture begins to boil, pour in some water and continue cooking. Once the gravy thickens, gently add the deep-fried paneer rolls and let it simmer for another 5 minutes.
- Your Paneer Patiala is now ready to be served hot alongside naan or tandoori roti.
