Mustard greens are a great option to enhance the enjoyment of food in winters. Through this simple recipe you can make delicious desi saag at home quickly and easily.
As soon as the cold season arrives, the aroma of mustard greens starts spreading in the kitchens of North India. It is the most favorite winter food in UP, Punjab and Haryana. Other dishes pale in comparison to its earthy aroma and desi taste. If you want to experience the real desi taste at home this time, then definitely try this recipe. Traditional methods take time, but this method is quick to prepare.

Wash and cut the greens: First of all, wash mustard greens and spinach thoroughly and drain the water. Then cut them into thick pieces and keep them aside.
Cook in cooker: Add chopped greens and spinach to the pressure cooker. Add half cup of water, turmeric and salt in it. Cover the lid and cook for 3 to 4 whistles and then turn off the gas.
Prepare masala in ghee: Heat ghee in a pan. Add cumin seeds in it and crackle it. Then add ginger, garlic and green chilli. When the aroma starts coming, add onion and fry until golden. If you are using tomatoes, add them also and cook till they become soft.
Mix greens and add gram flour: Now mix the cooked greens in the cooker with the spices. If the greens seem a little thick, add some water. Dissolve gram flour in one spoon of water and slowly add it to the greens so that lumps do not form. Cook for 4 to 5 minutes so that the flavors blend well.
Red chilli seasoning: Heat ghee in a small pan and add red chili powder to it. Pour this tempering on the prepared greens. This will double the taste.
How to serve: Hot mustard greens taste most delicious with corn roti. Put some butter on top, then its taste will be such that you will feel like eating it again and again.
