Rajma-chawal (kidney beans and rice) is everyone's favorite comfort food, but it takes a lot of time to prepare. Rajma pulao is a "shortcut" version with the same delicious taste. It's a one-pot meal, meaning the entire dish is cooked in a single pressure cooker. This means fewer dishes to wash and less effort. It has the protein of kidney beans and the flavor of rice, making it a complete meal.



Ingredients needed for Rajma Pulao:
The best part about this dish is that you don't need to rush to the market. You can make it with ingredients you already have at home:


1 cup Basmati rice (soaked)
1 cup kidney beans (boiled or soaked overnight)
Onion, tomato, ginger-garlic paste
Whole spices (bay leaf, cumin seeds, cloves) and your everyday spices (turmeric, red chili powder, garam masala).


The easiest way to make Rajma Pulao:
First, heat some ghee or oil in a pressure cooker and add cumin seeds and whole spices. Now add the chopped onion and sauté until golden brown. Then add the ginger-garlic paste and chopped tomatoes and cook with the spices. When the spices become fragrant, add the boiled kidney beans and the soaked rice.


Now add water as needed (usually twice the amount of rice) and salt. Close the lid of the pressure cooker and let it cook for 2 whistles. That's it! Turn off the gas and let the steam release naturally. The aroma that fills the air when you open the lid will instantly lift your spirits.


Serve it with boondi raita, papad, and pickle. Believe me, this quick and easy rajma pulao will be such a hit with your family that they'll keep asking you to make it again and again.
