Ingredients for Gajar Halwa
Grated Carrots - 4 cups
Milk - 2 cups
Ghee - 2 tablespoons
Khoya (optional)
Sugar - 1 cup
Cardamom powder - 1/2 teaspoon
Cashews and Almonds - a few, chopped
Raisins - 1 tablespoon (optional)


Instructions


To make Gajar Halwa, first wash the carrots thoroughly and grate them. Then, heat the ghee in a pan and add the grated carrots, sautéing them lightly. Once they are sautéed, add the milk and let it cook on low heat. Cook until the milk is completely absorbed. After the milk has dried up, add the sugar and mix well.



Let it cook until the halwa starts to release ghee. If desired, add khoya at this stage and cook for another five minutes. Finally, add cardamom powder, chopped cashews, and almonds and cook for another 2-3 minutes. The halwa is now ready. Serve it hot to your guests.
