Spiced Carrot & Lentil Soup is a warm, comforting bowl of goodness that beautifully blends earthy lentils with the natural sweetness of carrots and aromatic spices. Ingredients (Serves 3–4)

2 tbsp olive oil or butter

1 medium onion, finely chopped

2 garlic cloves, minced

1-inch ginger, grated

3–4 medium carrots, peeled and chopped

½ cup red lentils (masoor dal), washed

1 tsp cumin powder

1 tsp coriander powder

½ tsp turmeric powder

½ tsp red chilli powder or paprika (adjust to taste)

½ tsp garam masala

Salt to taste

4 cups vegetable stock or water

Juice of ½ lemon (optional)

Fresh coriander or parsley for garnish

Method

Heat oil in a deep pan on medium heat. Add chopped onion and sauté until soft and translucent.

Add garlic and ginger and cook for 1 minute until aromatic.

Stir in all the spices—cumin, coriander, turmeric, chilli powder, and garam masala. Cook for 30 seconds.

Add chopped carrots and red lentils, mix well to coat them with spices.

Pour in vegetable stock or water and add salt. Bring to a boil.

Reduce heat, cover, and simmer for 20–25 minutes until carrots and lentils are soft.

Turn off heat and blend the soup until smooth using a hand blender or mixer.

Adjust consistency with warm water if needed.

Add lemon juice for freshness and mix well.
