Curd is one of the most versatile and easily available dairy products found in Indian kitchens. Rich in probiotics, protein, and calcium, it not only aids digestion but also adds a refreshing, tangy flavor to meals. From breakfast to dinner, it is used in many forms to satiate the taste buds. But, what if the packaged curd you eat at home becomes the reason for illness? Yes, you read it right. As per recent buzz on social media, Amul dahi failed to meet food safety standards. As per a post by the handle Trustified on Instagram, Amul curd samples failed the quality test. In the test they compared pouch versus cup packaging. In the test they mentioned that SNF (Solid Not Fat) content for pouch packaging was 11.29, which is higher than the minimum of 8.5 as per FSSAI guidelines. And then in the microbiological test of curd they found two bacterias-Coliforms yeast and mold, and they were found to be way higher than FSSAI limits. And with respect to cups packaging, they didn't find anything alarming in the microbiological test The video concluded that the pouch packaged curd has lower hygiene level as compared to the cup variant.



On January 5, Amul took it to X and shared a post captioned, "Issued in Public Interest by Amul. The post which has garnered 247.5k views till now, reads, "We wish to inform you of a video regarding Amul Masti Dahi failing quality tests as reported by Trustified is circulating on WhatsApp and social media."






"Dahi is a live product with healthy bacteria and should be handled carefully as per the instructions on the pack. We are not sure how the sample was drawn and handled before testing."



The post further reads, "We wish to clarify that we have gone through our manufacturing process as well as quality clearance reports for batch number SR04CM bearing Use-by date 7.12.25. The Amul masti Dahi pack meets all quality requirements mentioned under FSSAI as well as Amul internal quality standards."



Clarifying the manufacturing process, the post states, "Amul Masti Dahi is manufactured in ISO certified dairies using state-of-the-art facilities and goes through more than 50 stringent quality tests including various hygiene related tests before the product is dispatched to the consumers."



"We would also wish to clarify that Amul Masti Dahi packed in pouch as well as cup, undergo the same processing and hygiene steps with only the difference in the packaging to cater the specific needs of the consumers. The difference in price has no relation to hygiene standards followed but is due to the difference in cost of packaging materials."



"Such videos have been used to create misinformation and spread unnecessary fear and concern among consumers", the post concludes.




How to set curd at home








Method 1



Ingredients: 1 litre full cream milk and 1–2 tsp curd as starter culture




Method: First of all, boil milk well and let it simmer for 2–3 minutes. Once it is boiled well, turn off the heat. Let the milk cool till it is lukewarm. To check the temperature, check if you can comfortably dip your finger for 5–7 seconds. Once it is fit, add the starter or curd to the milk and mix gently. Cover and keep the bowl in a warm place, undisturbed, for 6–8 hours (or overnight in cooler weather). Once set, refrigerate for a few hours to firm up and enjoy.




Method 2


Ingredients: 1 litre full cream milk and 2 green chillies with stem



Method:
First of all, boil milk well and let it simmer for 2–3 minutes. Once it is boiled well, turn off the heat. Let the milk cool till it is lukewarm. To check the temperature, check if you can comfortably dip your finger for 5–7 seconds. Once it is fit, slit the green chillies lengthwise and drop into the milk along with seeds and mix gently. Cover and keep the bowl in a warm place, undisturbed, for 8–10 hours (or overnight in cooler weather). Once set, refrigerate for a few hours to firm up and enjoy.
