Basant Panchami will be celebrated on January 23, and the festival is closely associated with the colour yellow. Wearing yellow clothes and preparing yellow dishes on this day is considered auspicious, as yellow symbolises happiness, prosperity, and is believed to be the favourite colour of Goddess Saraswati.

Ingredients NeededFull-cream milk
Soaked rice
Sugar (as per taste)
Saffron strands
Dry fruits (almonds, cashews, raisins)
Mawa (optional)
Cardamom powder
Rose petals (for garnish)
Take a heavy-bottom pan and add milk to it. Cook on low flame, stirring occasionally, until the milk begins to boil and slightly thickens. Add the soaked rice and continue stirring so that it doesn’t stick to the bottom.
Once the rice is fully cooked and soft, add sugar and mix well. Meanwhile, soak a few saffron strands in warm milk and keep it aside. Now add chopped dry fruits and a little mawa to the kheer for extra richness.
Let the kheer boil once more, then pour in the saffron-infused milk and mix well. Cook on low flame for another 2–3 minutes. Finally, add cardamom powder and switch off the gas.
Allow the kheer to cool slightly. Garnish with rose petals and finely chopped dry fruits before serving.
