Why is this soup special?
Broccoli is rich in iron, protein, and vitamin C, which are essential for boosting children's immunity. Packaged soups from the market contain a lot of salt and preservatives, but this homemade soup is 100% fresh and pure... and best of all, it tastes so creamy that no one will even realize they're eating boiled vegetables.
The easiest way to make it:
Step 1: First, heat a little butter in a pan. Add finely chopped garlic and a little onion. The aroma that comes from sautéing the garlic in butter will instantly whet your appetite. Sauté it for just 1-2 minutes until it turns slightly pink.
Step 2: Now add small pieces of broccoli. Add a little salt and water, and cover the pan. Let it steam for only 3 to 4 minutes. Remember, don't overcook the broccoli so that its green color remains intact.
Step 3: Now turn off the gas and let the mixture cool down a bit. Now, put it in a blender and make a fine paste. Put this paste back into the pan and add some milk. Adding milk gives the soup that "creamy" texture that children love.
