The taste of Bundi laddus available in schools on the occasion of 26th January is very special. It is neither too crunchy nor too sweet. As soon as this laddu comes in hand, the light aroma of ghee and cardamom makes the mind happy and childhood memories are refreshed. But do you know that you can prepare the same taste of school laddus at home in exactly the same way. For this, neither any special machine nor much hard work is required. Just choose the right ingredients, keep the syrup at the right consistency and avoid making the boondi too crunchy. By taking a little care and adopting the right method, you too can make the same traditional, delicious Bundi laddus at home on Republic Day, which both children and adults will happily eat.

Ingredients for making boondi laddus

Gram flour 1 cup, water as required, ghee for frying, sugar 1 cup, water (for syrup) one and a half cup, cardamom powder half teaspoon, saffron 8-10 threads, cashew-almonds finely chopped, a little raisins.

How to make boondi laddus

  • Step 1: Prepare a thick but smooth batter by adding water little by little to the gram flour, taking care that there are no lumps.

  • Step 2: Heat ghee in a pan, pour the batter into the hot ghee with the help of a strainer and fry the soft boondi on low flame, the boondi should not be crispy.

  • Step 3: Make a syrup by adding sugar and water in another pan, add cardamom powder and saffron in it.

  • Step 4: Add hot boondi directly into the syrup and mix well so that the boondi absorbs the syrup.

  • Step 5: Add chopped cashews, almonds and raisins and keep the mixture covered for 4–5 minutes.

  • Step 6: Apply some ghee on your hands and tie round laddus with the slightly warm mixture.
