Onion paratha is a very popular and delicious breakfast dish from North India. In rural areas, the aroma of freshly made parathas in the morning is simply irresistible, and now even people living in high-tech cities like Hyderabad have started to appreciate it. Onion paratha is not only easy to make but also a perfect blend of taste and nutrition. The combination of finely chopped onions, fresh green chilies, and Indian spices, cooked between layers of whole wheat dough, doubles its deliciousness.
Ingredients required:
2 cups whole wheat flour
Salt to taste
1 teaspoon oil and water as needed
2 large, finely chopped onions
2-3 finely chopped green chilies
1 inch grated ginger
A handful of chopped fresh coriander
Half a teaspoon of carom seeds (ajwain)
Half a teaspoon of red chili powder
Half a teaspoon of garam masala
Half a teaspoon of dry mango powder (amchur)
Pure ghee or refined oil
Method:
First, take the whole wheat flour in a large bowl. Add salt and 1 teaspoon of oil. Now, gradually add water and knead the dough until it is soft and pliable. Make sure the dough is neither too stiff nor too wet. Cover the dough and let it rest for 10-15 minutes; this makes the parathas soft. In a bowl, take the finely chopped onions. Add green chilies, ginger, fresh coriander, and all the dry spices—carom seeds, red chili powder, garam masala, and dry mango powder. Add salt only when you are about to roll the parathas; otherwise, the onions will release water, making it difficult to roll.
Make medium-sized balls from the dough. Roll one ball slightly and place 2 teaspoons of the onion mixture in the center. Bring the edges together to the center and seal it like a pouch. Gently roll it into a round shape using dry flour. Heat a griddle over medium heat. Place the rolled paratha on the griddle. When light bubbles start appearing on one side, flip it over. Now, apply ghee or oil on both sides and cook, pressing gently, until golden brown and crispy. Serve the hot, freshly made onion parathas with fresh yogurt, mango pickle, or a dollop of butter.
