Pooja Dhingra, the country’s leading pastry chef, says that until now everyone remembered sweets only during celebrations. But now the rules have changed. In his words, “Nowadays it has become a part of daily casual food. Some people are eating it with coffee, for breakfast. Some people are eating sweets to fill their heart. Warm cookies, cakes that go well with coffee etc. are fast entering our menu in restaurants.”

But how can sweets be a healthy ‘choice’? Pooja says, “In the past we have seen that people are moving away from everything extra. Clean and balanced desserts are becoming more popular than fancy and overly sweet desserts. Today most modern pastry recipes use 15-30% less sugar than a decade ago. Demand for dark chocolate, coffee, citrus fruits, nuts and fermented dairy products has increased. As a result, desserts are not just about sweetness.”


Chia seeds are growing in popularity as a food

Chef Pema Thakchung Lepcha says, “People are more health-conscious now. They keep track of what they are eating, what has been used to make it. So they are not eating deep-fried dishes. Also, the request to use avocado, chia seeds is increasing. As a result, we also have to think more about dishes like avocado garden sushi or silken tofu.” In other words, everyone is paying attention to the taste or appearance of the food. But in addition to this, food quality should be kept in mind. In today’s fast-paced life, this change in habits will ultimately turn out to be positive, say experts.
