For chicken marination:



  • Chicken (with bones) = 1 kg

  • Curd = 1 cup

  • Ginger-garlic paste = 2 tbsp

  • Red chilli powder = 2 tsp

  • Turmeric powder = ½ tsp

  • Coriander powder = 2 tsp

  • Garam masala = 1 tsp

  • Lemon juice = 2 tbsp

  • Salt = as per taste


for rice



  • Basmati rice = 4 cups

  • bay leaf = 2

  • Green cardamom = 4

  • cloves = 6

  • Cinnamon = 2 pieces

  • Salt = as per taste


For biryani masala/gravy



  • Onions = 5–6 (cut into thin slices)

  • Tomatoes = 3 (finely chopped)

  • Green chillies = 3-4 (cut into long pieces)

  • Whole Spices (Shahi Garam Masala) = Cardamom, Cloves, Cinnamon

  • Biryani Masala = 2 tbsp

  • Saffron = 10–12 threads (soaked in milk)

  • Kewda/rose water = 1 tablespoon

  • Ghee = 3 tbsp

  • Oil = 4 tbsp

  • Green coriander and mint = handful (chopped)




 Method of marinating chicken


First of all, take chicken in a big vessel. Add curd, ginger-garlic paste, red chilli powder, turmeric, coriander powder, garam masala, lemon juice and salt. mix everything well Chicken Coat well. Now cover this chicken and at least 1 hour Let it marinate for . If you want a spicier and juicier biryani, it is best to marinate for 3–4 hours or overnight.




Rice Recipe


Wash and soak basmati rice for 30 minutes. Boil water in a large vessel and add bay leaves, cardamom, cloves, cinnamon and salt. Now add soaked rice and cook till 70%. The rice should not be completely cooked as it will be fully cooked during dum. Filter the rice and keep it aside.




Preparing Spicy Chicken Gravy


Now heat oil and ghee in a heavy bottom pan or large vessel. Add chopped onions to it and fry until golden brown. Take out half the fried onions and keep aside (for garnish). Now add whole spices to the remaining onion and fry until aroma comes. After this add green chillies and tomatoes and cook until the oil starts separating.


Now add marinated chicken and fry on high flame for 5–7 minutes. Then reduce the flame to medium and cover and cook for 15–20 minutes, until the chicken becomes soft and spicy. Now add biryani masala and mix lightly.




Layering and giving strength to biryani


Now in the same vessel, spread a layer of half the rice over the chicken gravy. Fried onions, green coriander, peppermint And add some saffron milk. Then add the remaining rice and repeat the same process. Finally add kewra or rose water. cover the vessel and cook on very low flame 20–25 minutes Give strength.
