  • Strawberry Ice Cream – 1 tub (approx. 900ml / 3 1/4 cups), high-quality with a short ingredient list

  • Full-Fat Milk Powder – 425g (approx. 4 1/3 cups), do not use skimmed milk powder

  • Optional Garnishes: 2–3 drops pink food colouring, edible dried rose petals, chopped pistachios


How to prepare strawberry ice cream



  1. In a large non-stick pan over medium-low heat, add the strawberry ice cream. Stir continuously until it has melted and is warm (avoid boiling).

  2. Gradually add the full-fat milk powder, stirring constantly to prevent lumps.

  3. Keep the heat on low-medium. Stir vigorously for about 15 minutes. The mixture will thicken, eventually forming a single mass that pulls away from the pan edges.

  4. Stir in pink food colouring if a more vibrant pink is desired.

  5. Transfer the hot mixture into a greased 8×8 or 9×13-inch pan. Press and flatten with a spatula.

  6. Allow to cool at room temperature, then refrigerate to set completely. Once firm, cut into squares and serve.
