If you fancy creating something a little different this Pancake Day - or if you're simply pushed for time - a home cook has shared her recipe for an unusual take on the treat.

Founder of Kirsty's Kitchen, Kirsty Fletcher took to TikTok to explain how it's done. "Okay, hear me out," she exclaimed in a video. "I love a stack of pancakes, but sometimes you just don't have the time to be creating one perfect-shaped pancake at a time."

On one such occasion, Kirsty revealed she created a large pancake instead, before scrambling it up and adding her favourite toppings. "It was incredible," she declared with Shrove Tuesday almost here.

Kirsty continued: "It was so quick and easy, and dare I say I preferred this over my usual pancake stack? Go and try it for yourself."

The home cook laid out a list of ingredients, namely: 80g ripe banana, one medium egg, a splash of almond milk, one tbsp oat powder, one tbsp plain flour, 25g protein powder, one tsp baking powder, one tsp vanilla extract, half tsp icing sugar, a handful of blueberries and a drizzle of maple syrup.

As for the simple method, Kirsty said start by placing all the ingredients into a bowl and mixing them until they are fully combined.

Next, heat a large pan or skillet and spray with Fry Light, before spooning the mixture onto the hot pan to create one large pancake.

"Cook on one side until golden and then flip and scramble your pancake," Kirsty advised. "Then, add your scrambled pancake to your plate and top with icing sugar, blueberries and maple syrup and enjoy!"

Your meal comes in at 419 calories, and boasts a high protein content of 29g. As for the carbohydrate and fat content figures, those are 63g and 8 respectively.

Scrambled pancakes are often known as the traditional Austrian dish, Kaiserschmarrn - translated as 'Emperor's Mess'.

According to Delish, the delicacy was reportedly created by a farmer who whipped up the recipe for Austrian Emperor Franz Joseph and his wife when they unexpectedly showed up at his door.

The site added: "At a loss for what to serve, he deconstructed the pancake and topped it with sugar and marmalade for what, apparently, was a hit."

And a new dish was born...
