  • Black pepper powder = ½ tsp

  • Salt = as per taste

  • Green Coriander = 2 tbsp (chopped)

  • Lemon juice = 1 tsp

  • Cornflour = 2 tbsp

  • Flour = ½ cup

  • Cornflour = 2 tbsp

  • Salt = a pinch

  • water = to make solution

  • Bread crumbs = 1 cup

  • Oil = for shallow or deep frying




Method of making (Step-by-Step Method)


First of all, clean the boneless chicken, add light salt and boil it. When the chicken is cooked well, cool it and chop it finely or shred it with hands. Take care that there is no excess water in the chicken, otherwise the mixture may become loose.


Now add boiled and mashed potatoes in a large bowl. Add shredded chicken to it. Now add finely chopped onion, ginger-garlic paste and green chilli. After this add tandoori masala, red chilli powder, turmeric, garam masala, chaat masala, black pepper and salt and mix well. Tandoori masala gives a special smoky and spicy flavor to this recipe.


Now add green coriander and lemon juice to it. Lemon juice balances the taste and adds mild sourness. Mix the mixture well and then add cornflour so that the cutlets bind well. If the mixture seems too wet, you can add a little more cornflour.


Now keep this mixture in the refrigerator for 15–20 minutes. This will make it easier to shape the cutlets. Take out from the fridge, take small portions and make cutlets in round or oval shape.


Now prepare a thick batter by mixing flour, cornflour, salt and water in a bowl for coating. Dip each cutlet in this solution and then wrap it well in bread crumbs. You can also double coating for more crunchy texture.


Now heat oil in the pan. The oil should be on medium flame. Slowly drop the prepared cutlets into the oil and fry until golden brown. If you want a healthy option, you can also make them in shallow fryer or air fryer (12–15 minutes at 180°C).
