In Rajasthan, Malpua is made in royal style. Here Malpua is fried in ghee and chilled rabri is poured over it. To make this, first of all prepare a thick batter by mixing flour, khoya and milk. To enhance the taste, add cardamom and fennel in it. Fry them in round shape in ghee and dip them in sugar syrup. Finally, serve it to the guests with Rabdi.
The taste of Malpua is slightly different in Bihar. Ripe bananas are used here. This Malpua is often eaten without syrup. To make it, a batter is made of banana, flour, khoya and milk. Then after frying in ghee, it becomes soft and aromatic.
The color of Holi in Mathura is special. Here Malpua is prepared from flour and semolina. Method of making it: Batter is made from flour, semolina and milk. After frying in ghee, Malpua is dipped in light syrup. Its taste is not very sweet.
In Odisha, Malpua is called Ampua. Here rice flour is used instead of flour. Sweetness is provided by jaggery. Batter is made by mixing rice flour, coconut and milk. Ampua prepared by frying in oil is lightly sweet and very tasty.
Malpua is also made in Jharkhand on Holi. Here its recipe is very similar to that of Bihar and it is made in every home.
