Ingredients
Rice - 2 cups
Paneer - 200 grams (cut into small cubes)
Vegetables - 1/2 cup finely chopped carrots, 1/2 cup bell peppers, and a bit of cabbage
Ginger and garlic - 1 tablespoon each, finely chopped
Green chilies - 2-3
Sauce - 1 tablespoon soy sauce, 1 tablespoon red chili sauce, 1 teaspoon vinegar
Spices - 1/2 teaspoon black pepper powder, salt to taste
Oil - 2-3 tablespoons
For garnish - finely chopped green onions
Preparation Method
Begin by heating a small amount of oil in a pan and frying the paneer cubes until they turn a light golden color. Once done, transfer the fried paneer to a plate and set it aside. This step helps the paneer maintain its texture in the fried rice, preventing it from crumbling.
Next, heat oil in a large pan over high heat. Add the finely chopped garlic, ginger, and green chilies. Sauté them for a few seconds to eliminate their raw aroma, ensuring they don’t burn.
Now, incorporate the chopped carrots, bell peppers, and cabbage. In Chinese cuisine, it’s essential to keep the heat high to ensure the vegetables cook while retaining their crunch. Stir-fry the vegetables for about 2-3 minutes.
