  • 1 large brinjal

  • 1 large onion (finely chopped)

  • 2 tomatoes (finely chopped)

  • 3-4 garlic cloves (finely chopped)

  • 1 green chilli (finely chopped)

  • 2 tbsp mustard oil

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon red chili powder

  • salt as per taste

  • Green coriander (for garnish)


How to make Baingan Bharta


Flavorful Brinjal Bharta is a great alternative to vegetable. To prepare this, first wash the big brinjal thoroughly. Now apply a little oil on the brinjal and fry it directly on the gas flame. Let the brinjal cook thoroughly from all sides so that its skin becomes completely black and the pulp inside becomes soft.


When the brinjal is roasted well, let it cool and then peel it and take out the pulp in a bowl. After this mash it lightly.


Now heat mustard oil in a pan. When the oil is hot, add finely chopped garlic and green chillies and fry until light golden.


After this add chopped onion and cook well. When the onion becomes light golden, add chopped tomatoes to it and cook the spices until the tomatoes become soft.


Now add mashed roasted brinjal to the prepared masala. Add turmeric, red chilli powder and salt and mix well.


Cook it for 4-5 minutes on medium flame so that the flavor of the spices gets mixed well with the brinjal. Finally add green coriander on top and turn off the gas. Serve hot brinjal bharta with roti, paratha or bajra roti.
