1 cup yogurt (curd)

1 teaspoon ginger-garlic paste

1 teaspoon red chili powder

1/2 teaspoon turmeric powder

1 teaspoon Garam Masala

2–3 green chilies

Whole spices (bay leaf, cloves, cinnamon, cardamom)

Salt to taste

2–3 tablespoons oil or ghee

Fresh coriander and mint leaves

Method for Making Restaurant-Style Biryani

Prepare the Rice

First, thoroughly wash the Basmati rice and let it soak for about 20–30 minutes. Afterward, add a bay leaf, salt, and the whole spices to the water, and par-boil the rice until it is about 70% cooked.

Prepare the Masala

Now, heat oil or ghee in a pan (or *kadhai*) and add thinly sliced onions; sauté them until they turn golden brown. Next, add the ginger-garlic paste, tomatoes, and green chilies. Cook this mixture thoroughly.

Add the Vegetables

Now, add the chicken (if using) or your choice of vegetables to the pan and cook for a few minutes. Then, add the yogurt, red chili powder, turmeric, and salt, and sauté the masala well until the spices are fully cooked.

Create the Layers

Now, in a separate cooking pot, first spread a layer of the prepared masala mixture. On top of that, add a layer of the par-boiled rice, and finally, sprinkle fresh coriander and mint leaves over the top.

Cook on 'Dum' (Steam/Slow Cook)

Cover the pot tightly and let it cook on a low flame (*dum*) for 10–15 minutes. This allows the aroma of the rice and spices to blend thoroughly, resulting in a magnificent-tasting Biryani.
