Melt butter in a large saucepan. When it melts, add chopped green chillies, red chillies and grated ginger and fry well, until a nice aroma starts coming from them.

Now add brown sugar and cook for a minute. Then add babycorn and mushrooms, stir well and mix all the ingredients together.
Step 3: Mix coconut milk, veg stock and spices
Now add coconut milk, veg stock, salt, coarse black pepper and black pepper powder as per taste and mix well.

When the mixture boils, reduce the flame and cook the soup until it thickens. Keep stirring occasionally so that it does not stick to the bottom of the vessel.
Once the soup has thickened, take it out in bowls and garnish with chopped coriander leaves. Serve hot with soup buns.

Tips and Tricks:
Selection of vegetables: You can also add other vegetables of your choice like carrots, green peas or spinach to the soup, which will make it even more nutritious.
Control thickness: If the soup becomes too thick, you can add a little more vegetable stock or water. If it seems too thin, you can add some cornflour slurry (dissolve cornflour in some water) and cook for some time.
Ginger quantity: The flavor of ginger is very important in soup. If you like the strong taste of ginger, you can increase its quantity slightly.
Coconut Milk Alternative: If you don’t like coconut milk, you can use normal milk or cream instead, but this will change the taste of the soup slightly.
Fresh Ingredients: When making soup, always use fresh ingredients, especially mushrooms and ginger, as it makes a huge difference in taste.
