Ingredients for making Raskheer



  • Sugarcane juice- 1 liter

  • Rice- 1/4 cup

  • dry fruits

  • cardamom powder

  • Milk- 2 tbsp

  • water as required


 


Step-by-step method of making Raskheer



  1. To make Raskheer, first of all you have to bring fresh sugarcane juice from the market. It has to be filtered and taken out in a big vessel. Now it has to be heated by placing it on the gas. When it starts boiling, lighten the gas flame.

  2. After this, add two tablespoons of milk in it and let it boil once again. When a black layer or foam appears on the sugarcane juice, take it out and throw it away. You have to keep doing this until the sugarcane juice stops foaming.

  3. By doing this neither the kheer will spoil nor its color will turn black. Now add water to it and dilute the juice a little so that it does not become like syrup.

  4. On the other hand, wash and soak the rice beforehand. After this add sugarcane juice. Keep the rice soaked so that there is no problem in cooking it.

  5. Cook the rice until it becomes soft. After this add cardamom powder to the rice. Once the rice is cooked, add chopped dry fruits like cashews and almonds to it. When the kheer starts becoming thick, turn off the gas and leave it to cool down a little.

  6. Raskheer is ready. To serve it, take out the kheer in a bowl. Add some dry fruits on top. You can eat it like this also. Traditionally Raskheer is also eaten with milk or curd.
