Tomato Pakoda Recipe
Step 1- First of all you have to prepare the potato stuffing for the pakodas. Add 1-2 spoons of mustard oil in a pan on gas. After the oil is hot, reduce the flame to low. Add thin fennel, crushed 1 tablespoon whole coriander, some cumin, 4-5 green chillies, 1 inch grated ginger in oil and cook on low flame. Crush 5-6 black peppers and add asafoetida and 2 tablespoons gram flour to it.

Second step- Add 2 tablespoons red chilli powder, turmeric, coriander powder, Kasuri methi and cook the gram flour with the spices. Cut 2 onions into slices and put them in oil. The onion has to be softened slightly. Crush 4-5 boiled potatoes with hands and add them. Add this masala only when the potatoes cool down. Add salt and black salt as per taste. Fry the potatoes lightly. Add some garam masala and mango powder and add green coriander.

Third step- Now we have to take tight tomatoes used for salad. Now, with the help of a peeler, make a hole in the stem side of the tomato and take out the pulp inside. Keep in mind that the hole in the tomato should not be made too big. Now fill the potato stuffing in the empty tomato with the help of a spoon. Fill all the tomatoes by pressing well.

Fourth Step- To make pakodas, prepare a thick batter of gram flour. Add salt, some celery, some asafoetida, light and red chili powder and make a solution by rubbing it with hands. Keep the gram flour to set for 10 minutes. Add 2 pinches of sweet soda and dip the tomatoes in this solution and put it in the oil in the pan. Keep the gas flame medium high. As soon as the gram flour is cooked, take out the pakodas.
