Potatoes (large, boiled and mashed) – 2 cups
Gram flour – 1 cup
Green chillies (finely chopped) – 2-3
Coriander leaves (chopped) – 2 tablespoons
Celery – 1 teaspoon
Asafoetida – half teaspoon
Salt – to taste
Water – as needed (to make a thick batter)
Mash the boiled potatoes in a large bowl. – Add gram flour, green chilies, coriander leaves, celery, asafoetida and salt and mix all the ingredients well. – Prepare a thick batter by adding water on low flame. Keep the batter covered for 10-15 minutes. – Heat oil in a pan, take a tablespoon of batter in hot oil and make round pakoras. Fry them slowly till they become golden and crispy. Dry the pakoras on tissue paper and serve hot. Serve hot potato pakoras with green chutney, tomato chutney or pickle. Enjoy it with tea or coffee. This recipe will help you make fun and tasty pakoras in the rainy season.
