Ingredients of Shaljam Gosht

1 kg mutton, cut into pieces
3-4 medium-sized turnips, peeled and chopped
2 large onions, finely sliced
3 tomatoes, chopped
2 tablespoons ginger-garlic paste
2-3 green chilies, slit
1 cup yogurt, whisked
1/2 cup oil or ghee
1 teaspoon cumin seeds
2-3 bay leaves
4-5 cloves
2-3 green cardamom pods
1 cinnamon stick
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 teaspoon coriander powder
1 teaspoon garam masala powder
Salt to taste
Fresh coriander leaves, chopped (for garnish)
Fresh ginger, julienned (for garnish)



How to Make Shaljam Gosht

Step 1:

Start by heating the oil or ghee in a large pot over medium heat. Add the cumin seeds, bay leaves, cloves, green cardamom pods, and cinnamon stick, and sauté for a few minutes until they release their aroma. Then, add the finely sliced onions and cook until they turn golden brown. Stir in the ginger-garlic paste and slit green chilies, cooking for another 2-3 minutes until the raw smell disappears.

Step 2:

Next, add the mutton pieces to the pot and brown them on all sides, which should take about 5-7 minutes. Once the mutton is browned, add the chopped tomatoes and cook until they become soft and blend into the mixture. Add the turmeric powder, red chili powder, coriander powder, and salt, stirring well to combine the spices with the mutton and tomato mixture.

Step 3:

After the spices are well incorporated, add the whisked yogurt, mixing it thoroughly into the curry. Let it cook for another 5 minutes until the yogurt is well absorbed. Then, add the chopped turnips to the pot and mix them in with the mutton and spices.

Step 4:

Pour in enough water to cover the mutton and turnips, then bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the mutton is tender and the turnips are cooked through. Stir occasionally and check the seasoning, adjusting salt if needed.

Step 5:

Once the mutton and turnips are tender, sprinkle the garam masala powder over the curry and mix well. Let it simmer for another 5 minutes to allow the flavors to meld together. Finally, garnish with freshly chopped coriander leaves and julienned ginger.

Step 6:

Serve the Shaljam Gosht hot with steamed rice or warm roti, enjoying the rich and hearty flavors of this traditional Pakistani dish.
