Appe is a South Indian food, sometimes called Paniyaram or Paddu, that is produced using a batter that is usually composed of rice and urad dal (black gram dal). This is a simple recipe for Appe:


APPE


1. Ingredients: 1 cup of normal rice or idli rice


1 cup black gram dal, or urad dal


teaspoon (optional) fenugreek seeds


To taste salt


One cup of sour buttermilk (or water-diluted yogurt)


One teaspoon of eno fruit salt


grease for the appetizer pan


2. Guidelines:

Step 1: Grinding and Soaking

Hand wash the urad dal and idli rice independently.


Soak them in water for four to five hours, together with the fenugreek seeds.


Empty the water and blend them into a silky paste, adding a little amount of water as necessary.


Step 2: Fermentation: Pour the batter into a basin, sprinkle with the salt, and stir well.


Fully combine the yogurt or sour buttermilk with the batter.


Place the batter in a warm location, cover it, and let it ferment for at least eight hours or overnight.


Step 3: Making Appe: The batter will have risen and become rather airy after fermentation.


Preheat an appe pan, also called a paniyaram pan, over medium heat. Lightly oil each mold.


Gently stir in a little pinch of fruit salt (eno) into the batter.


Spoonfuls of batter should be added to each mold until they are 3/4 full.


Cook, covered, over medium-low heat for a few minutes, or until the bottom is crispy and golden brown.


Step 4: Flipping and Cooking: Using a wooden skewer or spoon, carefully flip each appetizer.


Cook until crispy and golden brown on the opposite side.


Step 5: Serve: Take the cooked appe out of the pan and serve it hot with your preferred chutney, such as coconut or tomato.
