- 2 cups of white rice
- 1/2 cup urad dal
- 1/2 cup pure oil
- 1/2 teaspoon fenugreek seeds
- 1/2 kg boiled potatoes
- 2 medium chopped green chillies
- 1 tbsp mustard seeds
- 1/4 teaspoon turmeric
- 2 cups chopped onion
- 10 curry leaves
- salt to taste

- To make the masala dosa, first prepare the batter. For this, wash rice and urad dal and soak it in separate pots for about 6-8 hours.
- After rice and urad dal get wet well, grind them separately in the mixer. Grind fenugreek in rice and grind it.
- Then mix the batter of both things in a large container and add salt to it. Then keep it overnight.
- After preparing the dosa batter, you have to prepare its filling. To prepare the stuffing, heat 2 tablespoons of oil in a heavy bottom pan and add mustard seeds.
- Then add chopped onion, curry leaves, green chillies and fry it well.
- Then add a pinch of salt and turmeric powder and mix well. Now take chopped potatoes and mix it in roasted onions and mix.
- Slowly add water to the mixture and allow the potatoes to boil for about 5 minutes. Turn off the gas when the mixture becomes slightly thick.
- Now take a dosa pan and heat it on low heat. To make dosa, put 1 table spoon of oil on it.
- When the pan is hot, add the batter and spread it round. When it turns brown on the side of the dosa, reduce the heat and sprinkle a few drops of oil on the edges of the dosa and add 2 tablespoons of stuffing.
- Now fold the dosa and make crispy. In this way, make dosa with batter and then serve the masala dosa with coconut chutney and sambar.
