Making French fries at home isn't as easy as it seems. Often, they turn out soft, soggy, or greasy. But with a few simple kitchen hacks, you too can make perfectly crispy, golden, and delicious fries just like the ones you get at restaurants. Let's learn these easy tips.

1. Choose the right potatoes – that's the biggest secret!
Starchy potatoes are best for French fries. These potatoes are light, dry, and not too mushy.
If the potatoes are watery, the fries will never be crispy.

2. Soaking the potatoes after cutting is essential.
Cut the fries into thick pieces and soak them in cold water for at least 30 minutes.
This step removes excess starch from the outside, preventing the fries from becoming soggy and ensuring they become crispy when fried.

Which is the most important technique for making French fries crispy like those from a restaurant?
A. Adding spices to the oil
B. Over-boiling the potatoes
C. Double-frying technique
D. Overloading the fryer

3. Blanching, but not too much.
Drain the potatoes and blanch them briefly.

Boil for 4-5 minutes (until only 30-40% cooked).
Over-boiling will cause the fries to break apart.
Blanching makes the inside soft and the outer layer crispy.

4. Dry the fries completely.
This is the most important step.
After blanching, spread the fries on a dry cloth and let them air dry completely.
If there is any moisture, the fries will absorb oil and remain soft.

5. Double-frying technique, the real secret of restaurants.
First frying:
Fry on medium heat (150–160°C) until lightly golden.
Remove the fries and let them cool for 10 minutes.
In this step, the fries cook through from the inside.

Second frying:
Now fry again on high heat (180–190°C).
In just a few seconds, the fries will become crispy and golden brown. This double-frying technique is the real secret to achieving restaurant-quality fries.

6. You can also make crispy fries in an air fryer
Lightly coat the boiled and dried fries with oil.
Cook at 180°C for 12–15 minutes.
Stir once in between.
Fries turn out wonderfully crispy in an air fryer, too.

7. When to add the seasoning?
Add salt or your favorite seasoning to the fries immediately after frying.
Hot fries absorb the seasoning quickly, resulting in a better flavor.

Additional Tips
A light coating of cornstarch can also make the fries extra crispy.
The oil should not be too cold or too hot; otherwise, the fries will not cook properly.
Do not overload the pan with fries, otherwise, they will not become crispy.
