IngredientsVegetable (or sunflower) oil
Two large free-range eggs
100g plain flour
100ml milk
Preheat the oven to 225C (425F/gas nine). Pour 1cm of vegetable oil into each of the 12 compartments of a muffin or Yorkshire pudding baking tray.
Pop the oil-filled muffin tray into the preheated oven for 15 minutes so that the oil becomes really hot.
Meanwhile, beat the eggs, flour, milk and a pinch of salt and black pepper together in a jug until smooth.
Take out the muffin tray, then evenly fill the 12 compartments - sizzling with hot oil - up to halfway with the batter.
Pop the tray back into the oven for 12 to 15 minutes, with the door shut at all times, until risen and golden.
